Ingredients
- 3 bags kale leaves
- 4 oz feta cheese
- 1/2 cup nuts (sliced walnuts or other nuts)
- 2 red apples, diced with a squeeze of lemon on top
- 3/4 cup olive oil
- 1/4 cup lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Tear kale into very small pieces off of the stems.
- Massage kale gently with 1 tablespoon olive oil on your hands to soften the kale.
- Add cheese, nuts, and apples to the bowl- set aside.
- In a separate mixing bowl, combine olive oil, vinegar, salt, and pepper. Stir or shake to combine.
- Toss salad in half of the dressing and serve immediately.
- Extra dressing may be stored in refrigerator for 3-5 days in container with lid.
