Ingredients
- 1 large bunch kale leaves
- 4 oz feta cheese
- 1/2 cup nuts (sliced walnuts or others)
- 2 red apples – diced, sprinkled with lemon juice
- 3 tbsp olive oil
- 1-2 tbsp lemon juice
- 1 tbsp Dijon mustard
- 1 tsp honey
- Salt and pepper to taste
Instructions
- Tear kale into very small pieces off of stems.
- Massage kale gently with some olive oil on hands to soften it; add all ingredients to the bowl.
- Add the dressing and let sit for 10 minutes before serving.
