Ingredients
Salad
- 8 oz canned green beans
- 15 oz canned kidney beans (rinsed and drained)
- 15 oz canned black beans (rinsed and drained)
- 3/4 cup celery, finely diced
- 1/3 cup white onion, finely diced
- 2 tbsp minced Italian parsley (optional)
Dressing
- 1/2 cup olive oil
- 1/4 cup apple cider vinegar
- 2 tbsp sugar
- 1 tsp minced garlic
- Salt and black pepper to taste
Instructions
- Combine dressing ingredients in a jar or container with a tight fitting lid. Cover and shake for 30 seconds. Add salt and pepper to taste.
- Drain canned green beans.
- In a large bowl, combine green beans, kidney beans, black beans, celery, and onion.
- Add dressing and toss to combine.
- If desired, sprinkle parsley over mixture and toss again.
- Enjoy immediately or refrigerate in an airtight container.
