- 2 large sweet potatoes
- 1 (15 oz) can of chickpeas
- 2 cups cooked split peas

Instructions
- Wash sweet potatoes and poke holes in the potato with fork.
- Preheat oven to 400 degrees F.
- Bake sweet potato for 45-60 minutes (4 minutes in microwave will speed up process.)
- Prepare split peas.
- Add 1/2 cup chickpeas, 1/2 cup split peas and other desired topping to sweet potato.
- Bake for additional few minutes.
