Ingredients
- 1 (15 oz) can chickpeas, drained and rinsed
- 3 tbsp mayonnaise
- Salt and pepper (optional)
- 2 celery stalks, finely chopped
- 1/4 cup dill pickles, finely chopped
Instructions
- Mash chickpeas with a fork on a plate or cutting board.
- Add chickpeas to a bowl with mayonnaise, pickles, and celery. Add salt and pepper if desired and mix it all together.
- Serve on lettuce wraps or whole grain bread, or just scoop some on top of a salad.
- You can play around with this basic recipe. Add chopped up bell peppers, mustard, sun-dried tomatoes, or whatever else you like to add some different flavors or extra crunch.
