Ingredients
- 3 medium to large beets peeled and trimmed
 - 1 orange with zest
 - 1 lime with zest
 - 2 tbsp olive oil salt to taste
 - 1/2 cup chives minced - optional
 
Instructions
- Wrap beets in aluminum foil and roast at 400 degrees for 60 min.
 - Once cooled, the skins will easily peel off.
 - Cut beet in thin slices.
 - Add lime or lemon zest and juice from entire orange.
 - Add olive oil and toss to combine. Add salt to taste and toss to combine.
 - Optional - Add chives just before serving.
