Ingredients
- 6 slices of whole wheat bread (can be lightly stale)
- 1 medium banana, chopped
- 1 medium apple, peeled and chopped
- 1 & 1/2 cups raw, fresh cranberries, chopped (can mix with 1 tbsp stevia to help with bitterness)
- 1/2 cup walnuts, chopped
- 1/4 tsp salt
- 1 tbsp orange zest
- 3 large eggs
- 1/2 cup unsweetened almond milk (or regular milk)
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 2 tbsp stevia
Instructions
- Gather ingredients. Preheat oven to 350 degrees.
- Combine dry ingredients in a large bowl: bread, banana, apple, cranberries (with stevia), walnuts, salt, and orange zest.
- In a separate bowl, combine wet ingredients: eggs, milk, cinnamon, vanilla extract, and stevia. Stir to mix.
- Pour wet mixture into the dry mixture, mix well.

Spoon mixture into muffin tins. Place into oven uncovered and cook for approximately 20min or until bread starts to brown.
