Ingredients
- 1 (15 oz) can chickpeas, drained and rinsed
- 1 green onion
- 1 stalk celery
- 2 tbsp walnuts, chopped
- 2 tbsp dried cranberries
- 1/4 cup mayonnaise
- 1 tsp Dijon mustard (optional)
- 1/8 tsp salt
- Pinch of pepper
Instructions
- Mash chickpeas with a fork
- Add chickpeas to a bowl with celery, green onions, dried cranberries, walnuts.
- Add mayonnaise and Dijon mustard, along with salt and pepper to taste.
- Serve on whole grain crackers or slices of raw pepper.
