Ingredients
- 12 eggs
- 1 cup milk
- 1 cup cheddar cheese, shredded
- 2 tsp olive oil
- 1/2 tsp salt
- 1 tsp pepper
- 1/2 pound breakfast meat: turkey sausage, pork sausage, bacon, or ham
- 1 cup veggies of choice: fresh spinach, broccoli, and tomatoes or peppers and onion
Instructions
- Warm frying pan over medium-high heat. Add 2 tsp olive oil. Add breakfast meat and cook until fully cooked.
- In a medium bowl beat the eggs and milk. Stir in the cooked meat, shredded cheese, and veggies.
- Spoon the egg/meat/veggie mixture into 12 greased or paper-lined muffin tins.
- Bake at 350 for 30-40 degrees until set. Check often after 30 minutes.
