Eggs and Avocado on Toast

Ingredients

  • 1 slice whole-wheat bread
  • 1 egg, scrambled
  • 1/2 avocado
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Optional: Paprika

Instructions

  1. Toast bread
  2. Mash 1/2 avocado and mix with salt, pepper, paprika and lemon juice
  3. Spread mashed avocado on toast
  4. Place scrambled egg on top of avocado
