Ingredients
- 8 large eggs
- 1/2 cup heavy whipping cream
- 1 tbsp baking powder
- 1/4 teaspoon liquid stevia
- 1 tsp salt and pepper to taste
- 3 tbsp melted butter
- 30 oz canned cut baby corn, drained
- 2 cups yellow squash, diced
Instructions
- Preheat oven to 400 degrees F.
- Grease 3 qt baking dish with non-stick spray or butter.
- Adds eggs to large bowl and whisk well.
- Add in heavy cream, baking powder, stevia, salt, and pepper. Mix well.
- Add in melted butter, baby corn, and squash. Stir until combined.
- Pour mixture into baking dish and bake for 30 minutes.
- Remove from oven, stir, and return to oven for additional 30 minutes (eggs should be set lightly and top should be browned).
