Ingredients
- 1/3 cup canned pumpkin puree
- 1/3 cup whole milk Greek yogurt
- 1/4 cup chopped nuts (walnuts or pecans)
- 1 tsp pumpkin pie spice
- Stevia to taste
Instructions
- Mix pumpkin puree with 1/2 tsp pumpkin spice and stevia to taste (can add more pumpkin spice to taste as well).
- Place puree in a cup and top with 1/8 cup of the chopped nuts.
- Mix yogurt with ½ tsp of pumpkin spice and stevia to taste for desired taste (can add more pumpkin spice to taste as well).
- Place yogurt mixture on top of the nuts in the cup.
- Top yogurt with the remaining nuts.
- Optional variation for those who are not eating low-carb – can add granola to the nut topping for added crunch. Can also use honey instead of stevia for those who are not eating low-carb.
