- Dozen eggs
- 1/3 cup canned pumpkin puree
- 1/3 cup mayonnaise or ripe avocado
- 1 tsp dijon mustard
- 1/2 tsp coriander
- Salt to taste
- Optional topping: chopped chives
Instructions
- Hard-boil eggs
- Halve hard-boiled eggs
- Mash the yolks with 1/3 cup each pumpkin and mayonnaise, 1 teaspoon Dijon mustard and 1/2 teaspoon each ground coriander and salt.
- Spoon into the whites
- Optional – top with chopped chives
