Ingredients
- 2 cups sliced cucumbers, sliced into thin half-moons
- 2 cups sliced radishes, sliced into thin half-moons
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- 1 tsp salt
- Finely chopped green on ions
- Optional: 1/4 tsp sweetener (honey, white sugar, or sugar substitute)
- 2 tbsp fresh dill (or 2 tsp dried dill)
Instructions
- Wash, slice and combine cucumbers and radishes; set aside.
- In a separate bowl, combine the rest of the ingredients to make the dressing. For the best flavor, keep the veggies separate from the dressing and combine everything right before serving.
- Top with green onion, serve and enjoy!
