Radish and Cucumber Salad

Ingredients

  • 2 cups sliced cucumbers, sliced into thin half-moons
  • 2 cups sliced radishes, sliced into thin half-moons
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 tsp salt
  • Finely chopped green on ions
  • Optional: 1/4 tsp sweetener (honey, white sugar, or sugar substitute)
  • 2 tbsp fresh dill (or 2 tsp dried dill)

Instructions

  1. Wash, slice and combine cucumbers and radishes; set aside.
  2. In a separate bowl, combine the rest of the ingredients to make the dressing. For the best flavor, keep the veggies separate from the dressing and combine everything right before serving.
  3. Top with green onion, serve and enjoy!
