- 1 bunch of beets, scrubbed and rinsed (no need to peel)
- 1 tablespoon olive oil
- Salt to taste
Instructions

- Cut turnips into half inch cubes. Toss with salt and olive oil.
- Place on a large baking sheet in a single layer and roast for 25-30 minutes, until fork tender.
