Ingredients
Salsa
- 15 oz canned whole kernel corn
- 1/2 cup chopped red onion
- 1 medium red pepper, seeded and chopped
- 1 large tomato, diced
- 1 tsp minced garlic
- 1/3 cup chopped cilantro
Dressing
- 1/4 cup canola oil
- 1/4 cup lime juice
- 1/4 tsp ground cumin
- 1/8 tsp cayenne pepper
- Salt and pepper to taste
Instructions
- Combine corn, onion, pepper, tomato, garlic, and cilantro in large bowl. Mix to combine.
- In separate bowl, whisk together oil, lime juice, cumin, and cayenne pepper.
- Pour dressing over vegetable mixture. Stir to combine.
- Add salt and pepper to taste.
- Enjoy (Best if refrigerated for at least 1 hour)
