Ingredients
- 4 cups mixed greens
- 1 cup thinly sliced strawberries
- 1 can of chickpeas (15 oz. drained)
- 1/4 cup chopped raw pecans (optional)
- 1/3 cup (50g) crumbled feta cheese (optional)
- 1 Tbsp vinegar
- 1 Tbsp lemon juice
- 2 Tbsp honey
- 1/8 tsp dry mustard powder
- 3 Tbsp olive oil
Instructions
- Wash and dry spinach and drain chickpeas.
- Thinly slice strawberries.
- Top greens with sliced strawberries.
- Mix together the vinegar, lemon juice, honey, dry mustard powder and oil.
- Pour dressing over greens and strawberries. Toss well.
- Top with pecans, chickpeas, and feta; serve immediately.
