Strawberry Salad

Ingredients

  • 4 cups mixed greens
  • 1 cup thinly sliced strawberries
  • 1 can of chickpeas (15 oz. drained)
  • 1/4 cup chopped raw pecans (optional)
  • 1/3 cup (50g) crumbled feta cheese (optional)
  • 1 Tbsp vinegar
  • 1 Tbsp lemon juice
  • 2 Tbsp honey
  • 1/8 tsp dry mustard powder
  • 3 Tbsp olive oil

Instructions

  1. Wash and dry spinach and drain chickpeas.
  2. Thinly slice strawberries.
  3. Top greens with sliced strawberries.
  4. Mix together the vinegar, lemon juice, honey, dry mustard powder and oil.
  5. Pour dressing over greens and strawberries. Toss well.
  6. Top with pecans, chickpeas, and feta; serve immediately.
