Ingredients
- 2 large eggs
- 1/3 cup of spinach
- 1/4 cup of mushrooms, chopped
- 1/2 Roma tomato, diced
- 1tsp olive oil
- Salt & pepper (as needed)
- Garlic & onion powder (as needed)
Instructions
- Preheat oven to 350 degrees.
- Whisk together eggs, salt, pepper, garlic and onion powder.
- Heat olive oil in oven-proof skillet, add mushrooms and cook until tender.
- Add tomatoes and spinach, cook until spinach is wilted.
- Stir in egg mixture, cook until edges are set.
- Place into oven and bake until top is golden brown.
