Almond "Breaded" Tilapia Fillets

Ingredients

  • 4 tilapia fillets
  • 1/2 cup almonds, finely chopped (almond meal works too)
  • 1 tsp garlic or onion powder
  • 1/4 cup grated parmesan cheese (optional)
  • 1/2 tsp salt
  • Pinch of ground black pepper
  • 1 egg
  • Cooking spray

Instructions

  1. Preheat oven to 425 F degrees. Line large baking sheet with parchment paper, or spray baking sheet well with cooking spray.
  2. In one small bowl, mix ground almonds (or almond meal), garlic (or onion) powder, parmesan cheese, salt, and pepper. In another small bowl, whisk the egg.
  3. Dip each piece of fish into the egg mixture, coat completely in almond mixture and place on prepared baking sheet.
  4. Bake for 12 - 15 minutes or until golden brown.
