Ingredients
For the fruit layer
- 2 peeled and diced granny smith apples
- 2 cups fresh or frozen blackberries
- 4 tbsp coconut sugar
- 1 tsp ground cinnamon
- 1 tbsp lemon juice
- 2 tbsp water
For the topping
- 1 & 1/3 cup instant oats
- 1 tsp ground cinnamon
- 3 tbsp maple syrup
- 3 tbsp coconut sugar
Instructions
- Place all the ingredients for the fruit mixture in a saucepan and cook on high heat until it comes to a boil, then continue to cook on medium-high heat for an additional 10 minutes.
- Pour the fruit mixture into a 9x9in baking dish and set aside.
- Preheat oven to 355 degrees F.
- Place the oats and ground cinnamon in a mixing bowl and heat the maple syrup and coconut sugar for the topping in a saucepan over high heat until the sugar is melted, stirring frequently. Pour the mixture into the bowl with the oats and mix until well combined.
- Spread the topping onto the fruit layer in the baking dish.
- Place in the oven and bake for 10-20 minutes or until topping is golden brown.
