Ingredients
- 1 (15 oz) can low-sodium black beans, drained and rinsed
- 1/2 red bell pepper, small dice
- 1/2 onion, small dice
- 1/2 cup cheddar cheese, shredded
- 1 clove garlic, minced (or 1/2 tsp garlic powder)
- 1 tbsp cumin
- 1 tsp oregano
- 1/2 tsp salt
- Black pepper, to taste
- 1/8 tsp cayenne pepper (or any spice pepper you like)
- 1 egg
- 3/4 cup whole wheat breadcrumbs or almond flour
- Cooking spray, as needed
- 2 tomatoes, sliced
- 2 cups greens (romaine, spinach, arugula)
- 6 whole wheat hamburger buns or sandwich thins
Instructions
- Preheat oven to 375 degrees.
- Mash beans in a large bowl with a fork or potato masher.
- Mix in red pepper, onion, cheese, garlic, seasonings, egg, and breadcrumbs/flour. Mix well.
- Form into 6 patties.
- Line baking sheet with foil and spray lightly with cooking spray and place patties on baking sheet.
- Cook in oven until burgers firm up and reach internal temp of 165 degrees, about 12 minutes.
- Serve on toasted buns with lettuce, tomato, and any other condiments you like.
