Chickpea Caesar Wrap

Ingredients

  • 2 cups chopped romaine lettuce
  • 4 10-inch whole wheat wraps
  • 1 15 oz can chickpeas
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 4 hard-boiled eggs
  • 2 tomatoes
  • Caesar dressing

Instructions

  1. Drain chickpeas.
  2. Lay out tortilla
  3. Layer romaine lettuce, tomatoes, 1 hard-boiled egg and 1/2 cup chickpeas in middle of tortilla.
  4. Drizzle Caesar dressing over top and roll tortilla up into a wrap.
  5. Repeat for remaining 3 wraps.
