Ingredients
Gyro-Style Chicken
- 1 lemon, juiced
- 1 & 1/2 tbsp olive oil
- 1 tbsp oregano, chopped
- 1 lemon, zested
- 1 clove garlic minced
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 boneless, skinless chicken breast, cubed
- 2 cups baby spinach
- 1/2 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cucumber, thinly sliced
Tzatziki Dressing
- 2/3 cup plain nonfat Greek yogurt
- 2 tbsp cucumber, finely grated
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 clove garlic, minced
- 4 & 1/2 tsp. Salt
Instructions
- Preheat oven to 375 F.
- For Tzatziki Sauce: In a bowl, add the Greek yogurt, cucumber, lemon juice, olive oil, garlic, and salt, and stir to combine.
- For Chicken: In a separate bowl, add the lemon juice, 1 tbsp olive oil, oregano, lemon zest, garlic, salt, black pepper, and chicken, and toss to coat.
- Heat remaining 1/2 tbsp of olive oil in a pan over medium heat. Once the oil begins to shimmer, add the chicken, and cook until browned, about 5 minutes.
- Add the spinach, cherry tomato, red onion, cucumber, and chicken together in a large bowl and drizzle with the tzatziki sauce dressing.
