Low-Carb Cauliflower Mac and Cheese

Ingredients

  • 8 oz heavy cream
  • 4 oz sharp cheddar (shredded)
  • 4 oz mozzarella cheese (shredded)
  •  1/4 cup parmesan cheese (shredded)
  • 2 oz cream cheese
  • 1/8 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 1/4 tsp paprika
  • 1 large head of cauliflower

Instructions

  1. Preheat oven to 375ºF and coat an 9×13 baking dish with butter or non-stick spray.
  2. Cut cauliflower into small 1/2″ to 1″ pieces. Place pieces in a microwave safe bowl. Put a small amount of water in the bowl and cover bowl with damp paper towel then place in the microwave. Cook in the microwave 4-5 minutes until barely tender. Remove from microwave and drain well. Pat dry with paper towels. Set aside.
  3. In a small pot, combine heavy cream, cheeses, cream cheese, salt, pepper, and paprika. Heat under medium heat until smooth. Stir well.
  4. Add cauliflower to cheese mixture and toss to coat.
  5. Pour into baking dish and bake for 25-30 minutes until the top is golden brown and bubbly.
