Ingredients
Bites:
- 1/2 cup peanut butter
- 1 tsp ground cinnamon
- 3 tbsp coconut flour
- 3 tbsp coconut milk, canned
- 2 tbsp stevia or stevia/erythritol
- 1/2 tsp vanilla extract
- 1/4 tsp salt
Topping:
- 1 & 1/2 tsp ground cinnamon
- 1 & 1/2 tbsp stevia or stevia/erythritol
Instructions
- Gather ingredients.
- Combine peanut butter, 1 tsp cinnamon, coconut flour, coconut milk, 2 tbsp stevia/erythritol, vanilla extract, and salt in a bowl. Stir to mix until you have a smooth, doughy mixture.
- Shape into 12 balls.
- In a separate, small bowl, combine the topping ingredients: 1 and 1/2 tsp cinnamon with 2 tbsp stevia/erythritol. Stir to mix.
- Roll balls in the topping mixture in a light coat and place in a container.
- Can serve right away or store in the refrigerator or freezer until ready to serve.
