Ingredients
- 2 tbsp coconut oil
- 2 tbsp unsweetened coconut milk or low-fat milk
- 1/4 tsp vanilla extract
- 1 1/2 tbsp almond flour
- 1 tbsp sugar equivalent (Stevia)
- 1 tbsp unsweetened cocoa powder
- 1/8 tsp salt
- 2 tsp mini chocolate chips (optional)
Instructions
- Place coconut oil in a small microwave-safe coffee mug and microwave on high until melted (15-20 seconds).
- Allow oil to cool for about 1 minute.
- Whisk in coconut milk (or milk) and vanilla extract.
- Add almond flour, sugar, cocoa, and salt; continue whisking until completely incorporated.
- Stir in chocolate chips, if using.
- Microwave on high 30-40 seconds or until it is firm to touch and no longer glossy.
- Let stand for 8-10 minutes.
