Ingredients
- 1 cup (8 oz) whole milk ricotta
- 1/2 cup heavy whipping cream
- 2 tbsp honey or 2 tsp stevia
- 1 tsp vanilla flavoring
- 1 1/2 cups sliced berries (strawberries or raspberries work well)
- 1 tbsp balsamic vinegar
- 1 tsp peppercorns
Instructions
- Place the ricotta, sweetener, and vanilla in a small bowl and whip until smooth. Cover and refrigerate 1 hour.
- Place berries in a small bowl with the balsamic vinegar and pepper and stir to combine. Cover and refrigerate.
- To serve, put berry mixture on top with the ricotta mousse. Makes six 1/4 cup servings.
