Ingredients
- 3 lb pork tenderloin
- 3 tbsp brown sugar (exclude if doing low-carb – can do some stevia/erythritol)
- 4 tbsp dijon mustard
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1 tsp ground pepper
Instructions
- Preheat oven to 450 degrees
- Place pork tenderloin on a rack in a shallow roasting pan.
- Combine the sugar, mustard, paprika, salt and pepper in a small bowl until well-mixed. Spread half the mixture over the top of the pork.
- Place the pork in the oven and back uncovered for 15 min at 450 degrees.
- Spread the remaining brown sugar mixture over the pork and bake for 25-30 min longer or until the pork is done at 160 degrees on a meat thermometer.
- Remove from oven and let pork sit for 5 min before slicing and serving.
