Ingredients
- 1 cup cubed sweet potatoes
- 1 cup black beans
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp chile powder
- 2 tortillas
- 1/2 avocado
- 1/2 cup salsa
- Salt and pepper to taste
Instructions
- Preheat oven to 425 degrees F. Cut potatoes into cubes.
- Place cut-up sweet potatoes onto a baking sheet and toss in 1 tbsp of olive oil, salt, and pepper.
- Cook until soft inside and crispy on the outside, 30 minutes.
- Combine roasted sweet potatoes, beans, remaining 1 tbsp of olive, and spices in a saucepan on the stovetop. Cover and cook on medium heat until heated through, 5 minutes.
- Divide mixture among tortillas.
- Top with avocado and salad.
