Ingredients
- 6 large eggs
- 5 oz spinach
- 1 tbsp garlic
- 1 & 1/2 cup chopped sweet onion
- 8 oz mushrooms
- Salt and pepper to taste
Instructions
- Preheat oven to 375 degrees F. Coat a pie pan with cooking spray.
- Heat oil in a skillet, add mushrooms and cook until tender. Add onion and garlic, cook, until softened. Add spinach and cook until wilted. Remove all veggies from heat.
- Whisk eggs, milk, salt, and pepper in a bowl. Fold veggie blend and cheese into the bowl.
- Pour everything into the prepared pie pan and bake until set and brown, about 30 minutes.
