Ingredients
- 2 cans chunk light tuna in water
- 2 tbsp extra virgin olive oil
- 2 medium zucchini, spiralized or sliced in thin long strips (2 & 1/2 cups)
- 1 small tomato, chopped (1/3 cup) or canned tomatoes 2 cloves garlic, minced
- 1 small onion, chopped
- 1/4 cup chopped fresh basil or parsley
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1/4 cup grated parmesan cheese
Instructions
- In a large nonstick skillet heat the oil over medium heat. Add onion and zucchini and cook about 3 minutes or until just tender. Add the garlic and cook 30 seconds more. Add the 2 tablespoons of the basil, the salt, and pepper. Heat through.
- Top with the tuna, and sprinkle with the tomato, Parmesan, and remaining basil.
